Avocado Options
Salsa Verde
Ingredients
4 green peppers
1 ripe, Fresh California Avocados, seeded and peeled
1 small purple onion
1/4 cup fresh lemon juice
2 Tbsp. lime juice
2 Tbsp. water
1/4 tsp. salt
Instructions
Add all ingredients into a blender and blend until creamy. Pour into a bowl and set aside until ready to serve. Salsa Verde can be made ahead of time and stored in the refrigerator for up to two days.
Variations: For extra spice, add jalapeños with seeds removed to the blender. Leave seeds in for an extra hot kick.
Zippy Avocado Toast (or Crackers)
Ingredients
1 slice of bread, toasted (preferably sourdough)
1 raw garlic clove, cut in half
2 thin slices of tomatoes
1/2 ripe avocado, seeded, peeled and cubed
1 tsp. balsamic vinegar
1/8 tsp. salt
3 fresh basil leaves, optional
Instructions
Take the cut side of the garlic and rub one side of the sourdough bread with it.
On the same side of the toast, layer on the tomato slices, cubed avocado, and drizzle of balsamic. Add salt and basil leaves for garnish.
Miracle Avocado Ranch Dip
Ingredients
4 ripe, Fresh California Avocados, seeded, peeled and mashed
1 (0.5 oz.) package of ranch dip mix
Instructions
Stir ranch dip mix into the mashed avocado. Chill for one-half hour before serving.
Serve with crispy vegetables or chips.
