Sunrise Fruity Oat Cups
3 Cups Oats 1 Tsp Cinnamon 1/8 Tsp Salt 2 Tbl Brown Sugar 1 Tsp Baking Powder
1 Cup Milk 2 Eggs (whites) 1 Tsp Vanilla Extract
Topping: 1or 2 Chopped Apples (with peel) Cinnamon Berries
1 Mix Oats, brown sugar, baking powder, cinnamon, and salt.
2 Separately mix milk, eggs, vanilla. Add in oat mix and stir. Refrigerate overnight.
3 In the morning, Preheat oven to 350. Prepare muffin pan with butter or non-stick spray.
4 Place oat mix into 6 muffin cups. Press in chopped apple on top. Sprinkle with cinnamon. Add berries.
5 Bake until firm, about 20 minutes. Don’t overcook. Remove from muffin tin and serve after 5 minutes.
