Ingredients
1 pound chicken breast, cut into 2” strips
4 cups cauliflower, minced
1 stalk of asparagus, chopped
1 medium yellow onion, diced
3 cloves garlic, minced
Stir Fry Sauce
1/4 cup soy sauce
1/4 cup water
1 1/2 tablespoons maple syrup or honey
1 teaspoon red pepper flakes
Instructions
Mince the cauliflower until it looks like rice (you can use a food processor if you have one).
In a small bowl, whisk together ingredients for the Stir Fry Sauce.
Heat a large frying pan. Add a bit of oil and then add chicken. Cook until seared on all sides. Add onion and sauté on medium-high heat for 5 minutes, until soft.
Add asparagus and garlic. Continue on medium-high for another 5 minutes.
Add minced cauliflower and sauce. Fry for 5 more minutes.
Serve!
